Up on Poppy Hill Tempura

If we’re really getting technical it was fish that they turned into tempura in the film, but the nice thing abut tempura is that pretty much anything goes so long as it can be dipped in the batter and fried! With that in mind, we used large shrimp, zucchini, and onion rings! All were delicious and hot, so fry away to your heart’s content!

Ingredients:

1 pound large raw peeled and de-veined shrimp or deboned fish

Assorted vegetables, such as onion rings, zucchini, sweet potato wedges, squash, bell pepper strips, etc.

1 1/2 cups all-purpose flour

1/2 cup corn starch

1 tsp salt

1/2 tsp ground pepper

2 tsp baking powder

2 egg yolks

1 1/2 cups cold water

6 cups canola oil for frying

Whisk together the flour, corn starch, salt, pepper, and baking powder in a low dredging dish. Add the egg yolks and 1 cup of water and whisk to combine. The texture of the batter should be like a thin pudding. If the batter is too thick, slowly add the other 1/2 cup of water until you reach the desired consistency.

Heat the oil in a high-sided dutch oven or other frying pot until it reaches between 350 and 375 degrees F. Carefully dredge your shrimp or fish in the batter and lower them into the hot oil using tongs or a fry basket. Do not overcrowd the pot - no more than six or seven pieces at a time in a large fry pot. This prevents sticking. Cook until the batter is golden brown, 2-3 minutes. The vegetables may take up to 4 or 5 minutes, depending on their size and the temperature of the oil. 

Let the tempura dry on some paper towels to remove excess oil and sprinkle with salt before serving. Tempura is best hot, so it’s best to eat no more than a few minutes after frying. Just don’t burn your tongue!

Reading about Ofelia, I'm just reminded of my own feisty old lady calico, down to how they both looked. She was with me for 19 years and even though it's been close to two since she passed, I miss that damn cat every day and feel like she should still be here. I feel you.
