Lemon Biscotti Protein Bars
Makes 12 bars
Ingredients
1 cup of oat flour
1 cup of almond flour (or ground almond meal)
2 scoops of vanilla whey protein powder
¼ cup of unsweetened shredded coconut (reserve some for toppings)
¼ cup of chopped almonds (reserve some for toppings)
¼ tsp of baking powder
2 – 4 oz jars of apple based baby food (or 8 oz of unsweetened applesauce)
Juice from one fresh squeezed lemon
4 oz of water
¼ tsp of pure lemon extract
½ tsp of pure almond extract
4 egg whites ( or 2/3 cup of liquid egg whites)
2 tbsp of raw almond butter
15 drops of liquid stevia ( or 3 packets of stevia)
Directions
Preheat oven to 350
In a large mixing bowl combine flours, protein powder, shredded coconut, sliced almonds, and baking powder
Mix thoroughly
In a separate medium-sized mixing bowl combine baby food, water, lemon juice, extracts, egg whites, stevia, and almond butter
Whisk until blended
Slowly add the liquid mixture to the dry ingredients and continue to whisk until batter thickens
Spray a 9x6 inch baking pan (glass or metal) with nonstick cooking spray and pour mixture into pan. **Recommended to use brownie pans or muffin pans to make them – then you don’t have to cut them up**
Bake at 350 for 12-15 minutes
Let cool before cutting or removing them from the pan
