I woke up feeling like death and wanted sweet confections so I made lemon scones with lemon butter glaze. Come over and grab one 🍋

Lemon Bars
Ingredients:
For Base
2 c sifted flour
1/2 c powdered sugar
1 c butter
For Top
4 lg beaten eggs
2 c sugar
1/3 c lemon juice
1/4 c flour
1/2 tsp baking powder
1/2 tsp fresh lemon rind
Preparation:
For the base mix the butter into the flour and sugar. Mix with hands until it clings together. Press into a 13x9x2 inch pan. Bake at 350 degrees for 20-25 min or until lightly browned. Remember it gets baked again with the curd so don’t overbake!
For the filling, beat together eggs, sugar and lemon juice (try to keep the froth to a minimum).
Sift together flour and baking powder. Stir into egg mixture. Pour over baked, cooled crust. Bake at 350 for 25 minutes.
Cool and sprinkle with powdered sugar. Cut into bars.

Glazed Lemon Poppy Seed Muffins Recipe
Ingredients:
3 Cups Cake Flour (384g)
3 1/2 Teaspoons Baking Powder (17.5g)
1/4 Teaspoon Salt (1.5g)
1 Cup Milk or Milk Substitute (240ml)
1/4 Cup Lemon Juice (60ml)
2 Teaspoons Vanilla (10ml)
2 Tablespoons Lemon Zest (12g)
3/4 Cup Butter, Softened (168g)
1 1/3 Cup Sugar (256g)
2 Egg Yolks
2 Egg Whites
4 Teaspoons Poppy Seeds (11.2g)
Glaze:
1 1/2 Cups Powdered Sugar (180g)
2-3 Tablespoons Lemon Juice (30-45ml)
Directions:
In a bowl, whisk together flour, baking powder,and salt. Set aside. In another bowl, whisk together milk, lemon juice, vanilla, and zest. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy. Add egg yolks, mixing just until combined. Add flour mixture to butter mixture alternating with milk mixture, beginning and ending with flour mixture.
In a separate bowl, beat egg whites until stiff peaks form; gently fold into batter. Stir in poppy Seeds.
Grease a muffin tin with cooking spray or line with paper liners. Spoon batter into muffin cups, filling three-fourths full. Bake in a preheated oven at 350F for 18-20 minutes or until an inserted toothpick comes out clean. Cool in pans 5 minutes, then remove to a wire rack and cool completely.
To Prepare Glaze: Stir together powdered sugar and lemon juice. Drizzle glaze over muffins. Let stand until glaze is set.
