Went out to get some sweets at my favorite dessert cafe. Brought my To Go Ware 3-Tier Stainless Steel Food Carrier to bring home the goodies. With this carrier, I don't use their Take Out Boxes. I bought a slice of tiramisu, a lemon bar and a cannoli. Although the cannoli was slightly too long to fit comfortably, it still was all there😉. For small items, I like to use this carrier and for left over foods at a lunch or dinner. The sourness of lemon curd and the smoothness of vanilla ice cream come together in these Lemon Bar Ice Cream Sandwiches, which are made with buttery shortbread cookies.

Ingredients: 1 cup lemon curd. 2 cups vanilla ice cream. 1 package shortbread cookies.

Instructions: Lemon curd and vanilla ice cream should be mixed together well in a bowl. Cover a shortbread cookie with a thick layer of the ice cream mixture. Put another shortbread cookie on top to make a sandwich. Do it again with the rest of the cookies and ice cream mix. The sandwiches should be frozen for at least two hours before they are served.
