🍇 Breakfast - Green Smoothie
🍇 Snack - Handful of almonds and dried cranberries
🍇 Lunch - Fried up courgette and spinach in coconut oil, corn on the cobb, millet, tomato, mixed beans and parsley in a apple cider vinegar and extra virgin olive oil dressing. Then the most exciting part my homemade veggie burgers made of mashed sweet potato and mixed beans, brown rice and yummy spices including cumin, paprika and nutmeg. Ps... They tasted amazing!
🍇 Dinner - Boiled potatoes, corn on the cob, couple of veggie burgers, cucumber, tomato, spinach and cauliflower.
I had a very productive morning cooking and cooking, making a big mess and then cleaning and more... cleaning!! But it was great fun to get creative in the kitchen!! Often I find it makes such a difference to cook up a load of super grains in a big batch!! So yes lots of rice and quinoa steamed away as well as ingredients for a veggie burger!! I have rather gone veggie burger bananas this week and I found a new recipe I had to try out! This was contained sweet potato, mixed beans, brown rice and yummy herbs and spices including cumin and nutmeg.
