A new product has worked its way into my kitchen spice cupboard. A little pot of Caribbean flavour in the shape of the Levi Roots Reggae, Reggae range of food products. This is a dry rub that comes in either spicy original which isn't that spicy really. Or mild. What I did was take a piece of belly pork and poured boiling water over the skin to open up that pores. I then patted the pork dry and mixed together some of the spice mix with some olive oil. Rub that into the pork skin with plenty of salt. Then put into a very hot oven about 250 degrees of about half an hour. This will crisp up the skin and give you some great crackling. I served the pork with a potato and onion salad which worked really well with the Caribbean spices.
