I think Andor has done an amazing job showing you just how easy it was for people like Han Solo, and a lesser extent Rey and Finn, to believe that the Jedi and the Force could be "mumbo jumbo" or a "myth." Even only 19 years after Order 66.
Listen to the way the news on Coruscant frames the Ghorman massacre, talking about the "imperial martyrs" and the "insurgency" of the Ghor.
Then there's the senate's reaction to Mon's speech. Pretty sure Bail was the only one in there not calling for her head.
I'm not sure that the healer on Yavin was a Jedi, but she's clearly a Force user, and even Cassian is dubious about her healing abilities.
Even from the Doylist perspective, the Jedi are never really mentioned in the series. No one talks about the Force, Jedi or no, you never see the Jedi Temple on Coruscant, hanging out in the background.
Palpatine's propaganda and erasure of everything the Jedi had done and were known for was swift, thorough, and deliberate. The Jedi were traitors to the Republic. And everyone bought it hook, line, and sinker.

it's been many, many months since my brain has been able to conjure anything remotely obikin related until last night! for some reason! I was imagining some kind of jekyll/hyde au but it's anakin/vader and no one knows it's anakin that's vader. and when vader goes after people, he always spares obi-wan for some reason, and obi-wan can't understand why until one day he does.
