Chicken with Mango Salsa - Fresh & Flavorful Dinner
Grilled Salmon with Roasted Vegetables
INGREDIENTS——————————————
- 1 salmon filet 🍣
- 1 small broccoli head 🥦
- 1 carrot 🥕
- 1 small potato 🥔
- 1 red bell pepper 🌶️
- 2 tbsps olive oil 🫒
- 1 tbsp lemon juice 🍋
- 1 garlic clove 🧄
- Salt 🧂
- Pepper 🌶️
- Dill or parsley 🌿
INSTRUCTIONS—————————————
1. Preheat your oven to 400°F
2. Place the broccoli, carrot, potato, and red bell pepper on a baking sheet.
3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4. Toss the vegetables to coat evenly.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
6. In a small bowl, mix the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and pepper.
7. Brush the salmon fillet with the olive oil mixture.
8. Preheat a grill or grill pan over medium-high heat.
9. Place the salmon on the grill, skin side down.
10. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
11. Place the grilled salmon on a plate.
12. Add the roasted vegetables on the side.
13. Garnish with fresh herbs.
Сheese scones with green onions and ham
It's very cheesy, juicy, and delicious! If you haven't come across the word "scones" before, don't be alarmed, we will make soft triangular treats with a crispy crust. By the way, scones can be baked in the form of a large circle, and then cut into segments, so they will be soft on the sides.
Ingredients:
For the base:
300 g of flour
200 g of hard cheese
240 ml of kefir
100 g of butter
1 tbsp of sugar
1 tsp of baking powder
½ tsp of baking soda
Pinch of salt
For the filling:
200 g of ham
Green onions (to taste)
Additionally:
1 egg yolk
1 tbsp of milk
1 tbsp of sesame seeds
Recipe:
Add baking soda and baking powder to the floor, shift into a large bowl. Mix in salt and sugar. Then add pieces of butter and run the mixture into crumbs with your hands. Add grated cheese, finely chopped ham, and onions, maxwell. Pour in kefir and mix with a spoon.
Place the dog on the table and bleed it. At first, the dough will stick heavily to your hands, so you can add some flour (but just a little!). Then place the dog on a baking sheet lined with parchment paper. Shape the dough with your hands into a circle about 2 cm thick and put it into 8 pieces.
Mix the egg yolk with milk, brush the scenes with the mixture, sprinkle with sesame seeds. Bake at 200°C for 20 minutes.
You can add sausage, ham, herbs, sun-dried tomatoes, olives, and onions to the base.
We’ve decided to try and eat less meat. And we’re kicking off this new journey with a Thai-inspired tofu lettuce wrap. Pretty delicious.

Low cal goulash - 292 cal (4 servings)
- 10 gr olive oil (90)
- 2 small onions, diced (91 gr; 33 cal)
- 7 gr mild sweet paprika powder (25)
- 2 gr fennel seed (7)
- 2 gr cumin seed (9)
- 4 gr nigella seed (14; I used fennel, cumin, and nigella because they are substitutes for caraway, which I don't have. If you do, just sub with half a tbsp of caraway)
- 317 gr pork tenderloin, cubed (330)
- 400 gr can of tomato cubes (92)
- 1 tablet of beef bouillon (34)
- 424 gr potatoes, peeled and halved (365; 600 gr unpeeled)
- 216 gr carrots, peeled and chopped (71; 300 gr unpeeled)
- 1 orange bell pepper, diced (115 gr; 32 cal)
- 1 yellow bell pepper, diced (124 gr; 29 cal)
- 1 whole bunch of celery, tops and bottom removed, stalks chopped (275 gr; 39 cal)
In a massive pan, heat the oil and add the onions. Once onions are glassy, add spices. Once spices are fragrant, add meat and let brown for a couple minutes, then add bouillon and make sure that all the brown bits have lifted from the bottom of the pan. Add can of tomatoes and all the veggies. Add water until veggies are almost all underwater, so they'll cook properly. Once the goulash starts boiling, turn heat to low and let simmer for 1.5-2 hours. Enjoy!
This recipe makes for 4 good sized servings, or 3 massive ones. I had to use the largest pan I own because this was more than I anticipated.
Also good cold, according to my (drunk) boyfriend.
Turkey Bolognese
This delicious and hearty but light meat sauce is incredibly flavorful and packed with protein and veggies. I adapted the recipe from one of my favorite food bloggers, Inspiralized and her Bikini Bolognese. Whether you’re serving over zoodles, regular pasta or sopping it up with garlic bread, you can’t go wrong. I opted for lentil zucchini rotini and can’t wait to eat this dinner again!
Ingredients:
1 T. olive oil
2 carrots, finely diced
2 stalks of celery, finely diced
1 medium onion, finely diced
3-4 cloves of garlic, minced
1 lb. ground turkey
healthy pinches of a few favorite dried spices (basil, oregano, parsley)
salt + pepper to taste
1-2 t. red pepper flakes (optional)
2 T. tomato paste
28 oz. can crushed tomatoes
1/4 c. low sodium chicken broth
pasta of choice (zoodles, noodles, veggie noodles, etc.)
grated parmesan cheese for garnish
Directions:
1. Heat olive oil in a large skillet and add the carrots, celery and onion until the veggies are slightly softened (but not mushy). Add garlic and cook another 2-3 minutes.
2. Push veggies to the side and add ground turkey, crumbling as it browns and cooks. As it’s cooking, add spices, salt, pepper and red pepper flakes (optional).
3. Once cooked through, add tomato paste, crushed tomatoes and chicken broth. Bring to a boil and then let simmer for 20-30 minutes.
4. Serve over your favorite pasta and sprinkle with grated parmesan cheese. This freezes and reheats well, too! Enjoy!
I got word of the ACLU giving activist training in Seattle and signed up early enough to make the in-person sessions, versus the remote/online training. Trainings happen ever other week and run into November. Most are at the Library in one of the meeting rooms on the insane red floor.
The evening included light dinner (I went with roast turkey for the sandwich and the vegan Ding Dong for dessert), a visioning exercise with a table of people, and a raffle in which I won a pass for two to see OFFICIAL SECRETS, starring Kiera Knightly, which is about British agent Katherine Gun and her 2003 whistle-blowing at the NSA. Two older activists (a couple who seemed to be closer to my parents’ ages) who sat at my table said they saw the movie at SIFF this summer and it was really good.
