Lime Custard themed stimboard
Lime and coconut meringue pie as the 81st bake from the 2016 Great British Bakeoff cookbook. The coconut pastry was really like a shortbread, very easily tearing. I had to switch to a more angled pie form from the loose based sandwich tin, as the dough kept tearing on the vertical walls. An other thing I’ll leave a bit more than half of the Swiss meringue to pipe as I had barely enough to build up and cover the top. I had extra from the lime custard, I had it as a separate dessert. It is a nice very tart custard.
