Enjoy the best of both worlds with these Potato Skin Burgers. They combine the flavors of loaded potato skins with a juicy burger for a mouthwatering meal.
Ingredients: 1 lb ground beef. 4 large russet potatoes. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped green onions. 4 strips bacon, cooked and crumbled. Salt and pepper to taste. Cooking oil for frying. Burger buns.
Instructions: Preheat the oven to 400F 200C. Scrub the potatoes and pierce them with a fork. Bake for 45-60 minutes or until tender. While potatoes are baking, shape the ground beef into 4 burger patties. Season with salt and pepper. Heat a grill or stovetop grill pan over medium-high heat. Grill the burgers for 3-4 minutes per side or until cooked to your desired doneness. Remove the baked potatoes from the oven and let them cool slightly. Cut them in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin. Brush the potato skins with cooking oil and bake for an additional 10-15 minutes until they are crispy. Fill the potato skins with shredded cheddar cheese and return to the oven until the cheese is melted and bubbly. To assemble the burgers, place a burger patty on the bottom half of each bun. Top with a cheese-filled potato skin, sour cream, chopped green onions, and crumbled bacon. Place the top bun on each burger and serve hot.
