Ingredients: 4 large potatoes, peeled and diced. 1 tablespoon olive oil. 1 teaspoon salt. 1 teaspoon black pepper. 1 teaspoon garlic powder. 1 lb boneless, skinless chicken breasts, cubed. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 1/4 cup chopped green onions. 1/4 cup ranch dressing.
Instructions: Preheat oven to 375F 190C. In a large bowl, toss diced potatoes with olive oil, salt, pepper, and garlic powder until evenly coated. Spread seasoned potatoes in a single layer on a baking sheet. Bake for 20 minutes or until potatoes are tender and slightly golden. In the meantime, cook cubed chicken in a skillet over medium heat until no longer pink. In a 9x13 inch baking dish, layer cooked chicken over the roasted potatoes. Sprinkle shredded cheddar cheese, crumbled bacon, and chopped green onions over the chicken layer. Drizzle ranch dressing evenly over the top. Return the casserole to the oven and bake for an additional 10 minutes or until cheese is melted and bubbly. Serve hot and enjoy!
