Ingredients: 2 lobsters, cooked and shelled. 1/4 cup butter. 1/4 cup all-purpose flour. 1 cup chicken broth. 1 cup heavy cream. 1 cup frozen peas. 1/2 cup diced carrots. 1/2 cup diced potatoes. 1/4 cup diced onion. Salt and pepper to taste. 2 sheets puff pastry, thawed.
Instructions: Preheat oven to 400F 200C. In a large saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to make a roux. Gradually whisk in chicken broth and heavy cream until smooth and thickened. Add peas, carrots, potatoes, onion, and cooked lobster meat. Season with salt and pepper. Simmer for 5-7 minutes until vegetables are tender and lobster is heated through. Pour the mixture into a 9-inch pie dish. Place puff pastry sheets over the filling, trimming any excess. Crimp edges to seal. Make small slits in the pastry to allow steam to escape. Bake for 25-30 minutes or until pastry is golden brown and filling is bubbly. Serve hot and enjoy!
