Ingredients: 1 lb linguine pasta. 2 lobster tails, meat removed and chopped. 2 tbsp olive oil. 3 cloves garlic, minced. 1/2 cup cherry tomatoes, halved. 1/4 cup white wine. 1/2 cup heavy cream. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Follow the directions on the package to cook linguine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook until it smells good. It will take about 4 to 5 minutes of cooking after adding the chopped lobster meat to the pan until it turns opaque. Add the white wine and cherry tomatoes and mix well. Half the wine should be left in the bottle. Put heavy cream and grated Parmesan cheese into the pan. Let the sauce cook until it gets a little thicker. Add pepper and salt to taste. Toss the cooked linguine in the pan with the sauce until it is well covered.
