Indulge in these soft, pillowy vegan sugar cookies reminiscent of the classic Lofthouse style. Perfect for any occasion, these jumbo cookies are sure to satisfy your sweet tooth without compromising your vegan lifestyle.
Ingredients: 1 cup vegan butter, softened. 1 cup granulated sugar. 1/4 cup unsweetened applesauce. 2 teaspoons vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup non-dairy milk. 1 batch vegan frosting store-bought or homemade.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large mixing bowl, cream together the vegan butter and sugar until light and fluffy. Add the applesauce and vanilla extract, and mix until well combined. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the non-dairy milk, until a soft dough forms. Divide the dough into large balls, about the size of golf balls, and place them onto the prepared baking sheet. Use the bottom of a glass to gently flatten each ball into a thick disc. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool completely on the baking sheet before frosting. Once cooled, frost the cookies with the vegan frosting and add any desired decorations. Enjoy your vegan Lofthouse style jumbo sugar cookies!
