How to (imho) properly prepare an absinthe, sans sucre (without sugar) using a Pontarlier glass using an eau verse. The glass is filled to the specified point on the pontarlier glass, ice placed in the eau verse and then chilled water poured over the ice and into the eau verse until it reaches the specified point - all marked with bevels in the glass.
