Dinner at Lung King Heen started out well when I was seated by the window with a stunning view of the Hong Kong skyline (see video on today’s story). Seconds later, to my delight, a champagne cart arrived and soon I had a nice glass of vintage Vincent Charlot Blanc de Blancs. But this meal was all about the signature Peking duck! The duck is offered in limited quantities and must be ordered at least 6 hours before you arrive. This advance work is well worth it, however. The duck, which is intentionally much leaner than most Peking duck, is masterfully prepared table-side and used for two dishes. The first preparation consists of 18 pieces of duck with crispy skin, pancakes (think tortillas) and various garnishes that you use to create your own delicious wrap. The remaining meat is then taken back to the kitchen and utilized for a second course - noodles in my case. In both courses, the duck was truly special and lived up to its billing! Service was also exceptional.
