Eating Plant-Based 101
A person who follows plant-based diets sticks to fresh and minimally processed plant foods while avoiding meats, eggs and dairy consumption. What they do eat includes grains, fruits, vegetables, legumes, lentils, nuts and seeds. Why might someone switch to plant-based eating, you ask? Well, there are many health benefits such as lowering risk of heart disease, type 2 diabetes, cancers and inflammation (which I’ll go into detail about in future posts :) ). It’s also sustainable, which our current food system is not. We have a high meat-consumption and high meat-production society that requires more land use, as well as water and energy, than it does to produce vegetarian foods that are equally as nutritious. Committing to this is a big step; which is why it’s easier to start off slow--perhaps going from daily meat consumption, to 5-6 days a week, down to 1-4 days.
