Kimchi
In ancient times, Koreans created a process for fermenting foods in order to preserve them for the winter. In modern times these fermented items have come to be known as Kimchi- one of Korea’s national dishes. Touted as one of the world’s top 5 healthiest foods- Kimchi consists of fermented cabbage and spices, and is loaded with vitamins A and C, probiotics, is very low calorie (only 15 calories per a 2 ounce serving!) and low in fat --which makes this super food a nutrient dense food. Although it contains sugar to help with the fermentation process, it does not contain very much (approximately 1 g per 2 ounce serving which is below the RDA limit of 30g) (Lee, 2011).
Vitamin A is essential for healthy teeth, skin, and vision. Kimchi is loaded with Vitamin A.
Vitamin C aids in the production of collagen and aids immune support. 2 ounces of Kimchi contains 8% of the daily requirement for vitamin C (Lee, 2011).
Optimizing the bacteria in your gut is one of the most powerful interventions you can implement to stay healthy. The fermentation process of Kimchi leads to the production of beneficial Latobacilli bacteria (just like Activia!- Korean Activia!) that can help you populate your gut with healthy bacteria(Mercola, 2013). Kimchi is an excellent food for coming off of a juice fast where you'll need to re-populate your gut with healthy flora.
Kimchi can also help detox your body from pesticides. Studies have shown that the bacteria in Kimchi break down some of the most pervasive pesticides in use today (Mercola, 2013).
You can have Kimchi on its own, mixed with eggs to make kimchi pancakes, or even mixed with rice to make Kimchi fried rice. You can find Kimchi in your Asian grocery, OR if you are lucky like me, you can ask your neighbor (whose mother owned a restaurant that served Japanese and Korean dishes) to help make Kimchi at home.
