Add the garlic and onion to the same skillet. Simmer until tender. Sliced tomatoes should be added and cooked until their juices are released. Over the vegetables, add paprika, turmeric, cumin, salt, and pepper. Mix everything together. Place half of the cooked vegetables in the bottom of a large pot. Add the browned chicken thighs on top. Evenly cover the chicken with rice. Evenly distribute the chicken broth over the rice by pouring it on top. Add the remaining cooked veggies on top. After covering, raise the pot to a boil. After the water boils, lower the heat to a simmer and cook the rice for 20 to 25 minutes, or until the chicken is soft. After cooking, take it off the heat and allow it to rest for five minutes before turning it out onto a platter to serve. Enjoy while hot!
