A luscious vegan dessert combining the tropical flavors of mango and coconut milk, thickened with tapioca pearls for a delightful texture.
Ingredients: 1 ripe mango, peeled and diced. 1 can 400ml coconut milk. 1/4 cup 50g sugar or sweetener of choice. 1/4 cup 30g tapioca pearls. 1/2 tsp vanilla extract. Pinch of salt. Mint leaves for garnish optional.
Instructions: Put the coconut milk, sugar, tapioca pearls, vanilla extract, and salt in a saucepan. Mix well. Over medium-low heat, bring the mixture to a simmer. Keep stirring it often so it doesn't stick. Take the tapioca pearls off the heat when they are cooked and clear, which should take about 10 to 15 minutes. Allow the mixture to cool a bit, then add the diced mango to it and blend them together. Mix until it's creamy and smooth. Put the pudding into bowls or glasses to serve. Put it in the fridge for at least two hours to set. If you want, add fresh mint leaves as a garnish before serving.

Cook Time: 15 minutes
