Asado a la estaca
The perfect recipe for fresh tender young meat with nice marbling. I bought a whole 20-year-old college drop-out and tried this delicious recipe on him. Gladly he was already shaved, washed and prepared beforehand, so I didn't have to do much. He was a bit difficult to handle, but I my friends were there to help me with the process. Saved his handsome head and legs for next week's cookout.
His roasted torso looked even better than the one in this book. My friends were impressed with my choice of meat, and even more impressed with how this recipe turned out. It does take long though, so keep that in mind if you wanna try it out.
