Ingredients: 4 medium potatoes, diced. 1/4 cup vegan mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon maple syrup. 1 tablespoon apple cider vinegar. 1/4 cup finely chopped red onion. 1/4 cup chopped fresh parsley. Salt and pepper to taste.
Instructions: Boil the diced potatoes in a pot of salted water until tender, about 10-12 minutes. Drain and let cool. In a small bowl, whisk together vegan mayonnaise, Dijon mustard, maple syrup, and apple cider vinegar to make the dressing. In a large mixing bowl, combine the cooked potatoes, chopped red onion, and chopped parsley. Pour the dressing over the potato mixture and gently toss until evenly coated. Season with salt and pepper to taste. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with additional parsley before serving, if desired.
