Ingredients: 2 cups all-purpose flour. 1 cup brown sugar. 1 tsp baking powder. 1 tsp baking soda. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/2 tsp ground cloves. 1/2 tsp salt. 1 cup unsweetened applesauce. 1/2 cup almond milk. 1/3 cup vegetable oil. 2 tsp vanilla extract. 2 medium apples, peeled, cored, and diced.
Instructions: Preheat oven to 350F 175C. Grease and flour a 9-inch round cake pan. In a large mixing bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. In a separate bowl, mix together applesauce, almond milk, vegetable oil, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples. Pour batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the maple sauce. For the maple sauce, whisk together 1/2 cup maple syrup and 2 tbsp vegan butter in a small saucepan over medium heat until the butter is melted and the mixture is smooth. Once the cake is done, remove it from the oven and let it cool for 10 minutes. Serve slices of the cake drizzled with warm maple sauce.
