With their creamy yolks and savory marinade, these marinated ramen eggs are the perfect thing to put on top of your bowl of ramen. They make your favorite noodle soup taste fuller and more flavorful.
Ingredients: 2 large eggs. 2 tablespoons soy sauce. 1 tablespoon mirin. 1 teaspoon sugar. 2 cups water. 4 servings of ramen noodles. Green onions optional, for garnish. Nori sheets optional, for garnish.
Instructions: In a small bowl, combine soy sauce, mirin, and sugar. Mix well to create the marinade. Bring 2 cups of water to a boil in a saucepan. Carefully add the eggs and boil for 6-7 minutes for a soft-boiled egg or 9-10 minutes for a medium-boiled egg. While the eggs are boiling, prepare a bowl of ice water. Once the eggs are cooked to your desired doneness, immediately transfer them to the ice water to cool and stop the cooking process. Let them sit in the ice water for about 5 minutes. Carefully peel the cooled eggs and place them in the marinade mixture. Ensure the eggs are fully submerged in the marinade. Let them marinate for at least 30 minutes, but longer for more flavor, preferably a few hours or overnight in the refrigerator. When ready to serve, cook your ramen noodles according to the package instructions, then drain them. Slice the marinated eggs in half lengthwise. Divide the cooked ramen noodles into bowls, and top each bowl with a marinated egg half. Garnish with sliced green onions and nori sheets, if desired. Serve hot and enjoy your delicious ramen egg!
