This is the ultimate one-pan dinner—minimal washing up, maximum flavour. One bite and you’ll see why it’s called the "Marry Me" pasta. You need to save this one!
Ingredients:
650g chicken breast (skinless/boneless), chopped
1 tbsp olive oil (or oil from the sun-dried tomato jar)
3 garlic cloves, crushed
170g sun-dried tomatoes (in oil), drained
1 tsp oregano
2 tsp paprika
250g orzo
650ml hot chicken stock
150ml double cream
50g parmesan, grated
120g spinach
Freshly ground black pepper
Method:
1 Heat the oil in a large, deep frying pan over medium heat. Add the chicken and cook for 5 minutes until browned.
2 Reduce the heat and add the garlic, sun-dried tomatoes, oregano, and paprika. Stir for 3-5 minutes until the garlic softens.
3 Add the orzo, stock, and pepper. Give it a good stir, put the lid on, and cook for 10 minutes (stirring occasionally) until the orzo is almost cooked.
4 Turn to the lowest setting, stir in the spinach and cream. Cook for 1-3 minutes until the spinach has wilted and the cream is hot. Ensure the chicken is cooked through.
5 Turn off the heat and stir in the parmesan.
