A fun take on classic cupcakes are these marshmallow cupcake-on-a-stick treats. They combine the deliciousness of cupcakes with the oozy goodness of marshmallows and chocolate, making them ideal for gatherings or entertaining.
Ingredients: 1 cup all-purpose flour. 1 cup sugar. 1/2 cup unsalted butter, softened. 1/2 cup milk. 2 large eggs. 1 tsp vanilla extract. 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 24 marshmallows. 12 wooden skewers. 1 cup chocolate chips. 1/4 cup heavy cream. Sprinkles for decoration.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs, one at a time, and then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture. Mix until just combined. Fill each cupcake liner about two-thirds full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let the cupcakes cool completely on a wire rack. While the cupcakes are cooling, melt the chocolate chips and heavy cream in a microwave-safe bowl in 30-second intervals, stirring until smooth. Set aside. Once the cupcakes are cool, insert a wooden skewer into each marshmallow, leaving enough space at the end to hold onto. Dip each marshmallow into the melted chocolate mixture, allowing the excess to drip off. You can also add sprinkles for decoration at this stage. Stick the chocolate-covered marshmallow onto the top of each cupcake on a skewer. Let the chocolate set, and your marshmallow cupcake-on-a-stick is ready to enjoy!
