Ingredients: 1 cup lentils, cooked. 1 onion, diced. 2 carrots, diced. 2 cloves garlic, minced. 1 cup frozen peas. 2 tablespoons tomato paste. 1 tablespoon soy sauce. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 4 cups mashed potatoes. Salt and pepper, to taste. 2 tablespoons olive oil.
Instructions: Warm the oven up to 190C 375F. Put olive oil in a pan and heat it over medium-low heat. Add the garlic, onions, and carrots and cook them until they get soft. Put in the tomato paste, soy sauce, thyme, rosemary, cooked lentils, and peas. Cook until everything is hot. Add pepper and salt. Put the lentil mixture in a baking dish. Add mashed potatoes on top. It should be baked for 25 to 30 minutes, or until the top is golden brown. Enjoy while hot!

Combine the mashed potatoes with the beef mixture. Mix well and let it cool. Shape the mixture into croquettes. Dredge each croquette in flour, dip in beaten egg, and coat with panko breadcrumbs. Heat oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides. Remove from the oil and drain on paper towels. Serve hot with tonkatsu sauce or your favorite dipping sauce.
