I loved mashed potato patties since I was a kid.  My mom used to make it for me all the time when I was in primary school.

What sets my mom's recipe apart from most Western mashed potato patties is that she added ground meat. This gives the patty a unique texture and flavor that's simply delicious. 

If you're not a fan of pork, no worries! You can always use ground beef instead.

I can find any excuse to eat potato. So, ok. Purim is tonight, so — mashed potato a cake as part of a traditional vegetarian dinner. Or. St. Patrick’s Day is tomorrow and Irish potato recipes are SO SO delicious, so — mashed potato cake to celebrate the day. You choose. Recipe is the same: the ingredients are “more or less” or should I say “about” — not exact measures. Mix 2 heaping cups of cold mashed potatoes with one egg, 3-4 chopped scallions and some plain bread crumbs (maybe 6-8 tablespoons) and salt if you wish. Shape into patties about 1/2 inch thick. The texture should feel firm and the patties hold together. Press the patties on both sides into some panko. Fry them a few at a time in hot vegetable oil over medium heat (3-4 minutes per side or until crispy). Place on paper towels, then eat.
