Potato Cake with Chilli Eggs is a tasty and filling way to start the day or have brunch. A hearty and tasty meal is crispy potato cakes topped with cheesy, spicy eggs.
Ingredients: 2 large potatoes, peeled and grated. 2 eggs. 2 green chillies, finely chopped. 1/2 cup grated cheese. Salt and pepper to taste. 2 tablespoons vegetable oil.
Instructions: Put the grated potatoes on a clean kitchen towel and squeeze out as much water as you can. Put the grated potatoes, chopped green chilies, half of the grated cheese, salt, and pepper in a bowl. In a nonstick skillet over medium-low heat, heat 1 tablespoon of vegetable oil. Take two equal amounts of the potato mixture and form each into a patty. Spread the potato patties out in a pan. Cook them for four to five minutes on each side, until they are golden and crispy. Take it out of the pan and set it aside. Add the last tablespoon of oil to the same pan and crack the eggs into it. You can cook the eggs sunny-side up or scrambled to your liking. On top of the potato cakes, put the cooked eggs. Then, sprinkle the rest of the cheese on top. Put the lid on for a minute to melt the cheese. If you want it hotter, top it with more chopped green chilies before serving.
