This is Almond Coconut Chicken with Salsa Verde. And it was delicious. However the meal plan said Cajun-Style Blackened Fish BUT the kids were both difficult at bedtime and delayed my cooking and the husband isn’t a fish fan so I pulled the pin on it and had this chicken dish ready in 30 minutes. The old me, when feeling overwhelmed like tonight, would have gotten takeaways or eaten something quick & easy but full of empty calories like cheese toasties.
