Ingredients: 4 large egg whites. 1 cup granulated sugar. 2 tablespoons unsweetened cocoa powder. 1/2 teaspoon cream of tartar. 1 teaspoon vanilla extract. 1/2 cup chocolate chips optional.
Instructions: Preheat your oven to 225F 110C and line a baking sheet with parchment paper. In a clean, dry mixing bowl, beat the egg whites and cream of tartar on high speed until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the egg whites until stiff and glossy peaks form. This should take about 5-7 minutes. Sift the unsweetened cocoa powder over the egg white mixture and gently fold it in until well incorporated. Be careful not to deflate the meringue. Fold in the vanilla extract and chocolate chips if using. Spoon or pipe the meringue onto the prepared baking sheet in small mounds or swirls. Bake in the preheated oven for 1.5 to 2 hours, or until the meringues are dry to the touch and easily lift off the parchment paper. You can also leave them in the oven with the oven door slightly ajar to ensure complete drying. Once done, remove the meringues from the oven and let them cool completely on a wire rack.
