More Motel Cooking — Meatball Sandwiches
When I tested my multipot in the motel room by making a one-pot pasta dish I only needed half of the meatballs in the smallest frozen bag I could find. So when we went grocery shopping I had also grabbed some ciabatta and the smallest jar of pasta sauce I could find to extend the meatballs into four days worth of meals—two days pasta, and two days sandwiches.
First, I toasted the ciabatta in the bottom of the multicooker. I started off on the lowest setting, still wanting to be careful of smoking up the room, but slowly raised it to medium before the bread started to properly toast. I then set the bread aside and turned the pot down to medium low and put the slow cooker liner in the pot and combined the meatballs and sauce. I cooked it for about 15 minutes and then decided to pop the heat to medium and cooked another five minutes.
I spread some of the ricotta left from the pasta recipe onto the bread and then added the meatballs and some of the mozzarella/parmesan mix and melted it in the microwave. It was quite yummy for premade meatballs.
Next, I’m going to move onto quesadillas, I think, since I successfully made a toasted cheese sandwich in the pot the other day. Fast food has gotten so expensive, and though this is short-cut homemade it’s still better than eating out everyday.
I’m so glad I remembered to grab this pot the other day, and a cutting board and some utensils, and microwaveable cooking bowls. It’s like I have a tiny little travel kitchen to match my mini altar! lol. And Děduška sits quite near the pot as his temporary hearth.
