Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1/2 cup unsalted butter, softened. 1 egg. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup mini chocolate chips. 1/2 cup heavy cream. 1 cup semisweet chocolate chips.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine the flour and cocoa powder. In another bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy. Add the egg and vanilla extract to the sugar-butter mixture and mix until well combined. Gradually add the dry ingredients flour and cocoa mixture to the wet ingredients, mixing until a dough forms. Stir in the mini chocolate chips. Grease a mini muffin tin and press a small amount of cookie dough into each cup, forming mini cookie cups. Bake in the preheated oven for 10-12 minutes, or until set. While the cookie cups are baking, prepare the chocolate ganache. Heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Place the semisweet chocolate chips in a heatproof bowl and pour the hot cream over the chocolate chips. Let it sit for a minute, then stir until smooth and creamy. Remove the cookie cups from the oven and let them cool in the muffin tin for a few minutes. Carefully remove the cookie cups from the tin and let them cool completely on a wire rack.
