Ingredients: 4 cups watermelon, cubed. 1 cup coconut water. 2 tablespoons lime juice. 2 tablespoons agave syrup or honey. Ice cubes. Lime slices and mint leaves for garnish.
Instructions: Put watermelon, coconut water, lime juice, and agave syrup in a blender. Mix until it's smooth. To get rid of the pulp, strain the mixture into a pitcher through a fine-mesh sieve. Wooden skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine beer, soy sauce, minced garlic, and black pepper to create the brine. Place pork cubes in the brine, ensuring they are fully submerged. Refrigerate for at least 2 hours, or preferably overnight. Preheat the grill to medium-high heat. In a small saucepan, heat apricot preserves and chili sauce over medium heat until well combined. Set aside. Thread marinated pork cubes and pineapple chunks alternately onto the soaked skewers. Brush the skewers with vegetable oil to prevent sticking on the grill.
