These Vegan Mint Oreo Truffles are a delightful treat perfect for celebrating St. Patrick's Day! They are easy to make, creamy, and bursting with refreshing mint flavor.

Ingredients: 1 package 14 oz vegan Oreo cookies. 1/4 cup vegan cream cheese, softened. 1/2 teaspoon peppermint extract. 1/4 teaspoon vanilla extract. 1 cup dairy-free dark chocolate chips. 1 tablespoon coconut oil. Green food coloring optional. Crushed vegan mint chocolate or candy canes for decoration.

Instructions: Pulse the Oreo cookies in a food processor until they are small pieces. Peppermint extract, vanilla extract, and vegan cream cheese should all be mixed into the crumbs. Pulse until everything is well mixed and a dough forms. Make little balls out of the dough and put them on a baking sheet lined with parchment paper. For 15 to 20 minutes, freeze. As you go, melt the dairy-free dark chocolate chips and coconut oil in 30 second bursts in a bowl that can go in the microwave. You can add green food coloring if you want to. Use a fork to cover each truffle evenly as you dip it into the melted chocolate. Take the chocolate back to the baking sheet and tap off any extra. Before the chocolate sets, top each truffle with crushed vegan mint chocolate or candy canes. To let the chocolate set, put the truffles back in the freezer for 10 to 15 minutes. Put the truffles in a container that won't let air in and put it in the fridge until you're ready to serve them.
