A comforting and flavorful Miso Ginger Carrot Soup that combines the natural sweetness of carrots with the umami richness of miso and the warmth of ginger. A perfect blend for a satisfying bowl of soup.
Ingredients: 1 lb carrots, peeled and chopped. 1 onion, diced. 3 cloves garlic, minced. 1 tbsp fresh ginger, grated. 4 cups vegetable broth. 3 tbsp white miso paste. 1 tbsp soy sauce. 1 tsp sesame oil. 1/2 tsp black pepper. 2 green onions, sliced for garnish. 1 tbsp sesame seeds for garnish.
Instructions: In a large pot, saut onions and garlic in sesame oil until softened. Add carrots and grated ginger, cook for an additional 5 minutes. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until carrots are tender. In a small bowl, whisk together miso paste and soy sauce until smooth. Add to the soup and stir well. Using an immersion blender, puree the soup until smooth and creamy. Season with black pepper and adjust salt if needed. Serve hot, garnished with sliced green onions and sesame seeds.
