Ingredients: 2 cups all-purpose flour. 1 3/4 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 2 tsp baking soda. 1 tsp baking powder. 1 tsp salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 tsp vanilla extract. 1 cup hot brewed coffee. 1/4 cup espresso powder. 1/2 cup semisweet chocolate chips. 1/2 cup unsalted butter. 1/4 cup heavy cream. 2 tsp instant coffee granules. 1 tsp vanilla extract. 2 cups powdered sugar. 1/4 cup unsweetened cocoa powder. 1/4 cup milk.
Instructions: Set the oven temperature to 175C 350F. Butter and dust two 9-inch circular cake pans. Sift together flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. To the dry ingredients, add eggs, buttermilk, vegetable oil, and vanilla extract. Stir until fully incorporated. Dissolve the espresso powder in the hot, freshly brewed coffee in a different bowl. Blend the batter with this coffee mixture until it's smooth. Mix the semisweet chocolate chips into the mixture using a spoon. Evenly divide the batter between the two cake pans that have been prepared. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven. After taking the cakes out of the oven, give them ten minutes to cool in the pans. After that, move them to a wire rack to finish cooling. Melt the butter in a saucepan over low heat to make the mocha frosting. Add the heavy cream and stir until the instant coffee granules are dissolved. After taking the saucepan off of the burner, add the vanilla extract. Give it a few minutes to cool. Add cocoa powder and powdered sugar gradually while whisking to form a smooth, creamy frosting. To get the right consistency, you can add milk if it's too thick. After the cakes cool completely, frost one layer, then top with the second layer and frost the sides and top of the cake. After decorating as desired, serve.
