Chili Night
For me, making chili is like grilling, it all starts off with a good beer. This one is the Oktoberfest made by local brewers, Wiseacre:
This is my go to cook book for making chili. My maternal grandmother gave it to me decades ago. It has about five chili recipes and I cherry picked each one to come up with my own recipe:
This is the recipe that I actually use as a rough guideline:
One thing not listed on that recipe is Chorizo. I cook it first rather than mixing it with the beef since it renders out so much oil:

I usually use canned beans for my chili but I did dried beans this time. They take longer but they give you plenty of time to get you mise en place in place:
Sweeting the onions in the Chorizo renderings is the first step in building flavor. Next, I add garlic, sweet peppers, hot peppers and celery ... in that order:
