Monster Eye Cookies are delightfully spooky treats that are ideal for Halloween or any other monster-themed occasion. These soft and chewy cookies have marbling and eerie 'eyes' made of white chocolate.

Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 2 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 cups semi-sweet chocolate chips. 1 cup quick oats. Green and blue food coloring. 1 cup white chocolate chips. Red gel food coloring.

Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix until just combined. Fold in the semi-sweet chocolate chips and quick oats. Divide the cookie dough into two portions. Add green food coloring to one portion and blue food coloring to the other, mixing each until the desired color is achieved. For each cookie, take a small amount of green dough and a small amount of blue dough, then press them together to create a marbled effect. Place the marbled dough balls onto the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are golden. The centers will still be slightly soft. Remove from the oven and immediately press white chocolate chips into the center of each cookie to create the 'eye' effect. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Once the cookies are completely cool, use red gel food coloring to create 'veins' on the white chocolate chips to resemble 'monster eyes.'
