Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large bowl, combine the grated zucchini, vegetable oil, eggs, sugar, and vanilla extract. Mix well. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in chopped walnuts, raisins, or chocolate chips. Fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
