Another quick and easy way to make lasagna is in a skillet. You can get all the flavors of traditional lasagna in a lot less time if you cook it in a skillet instead of an oven.
Ingredients: 1 lb ground beef. 1 onion, chopped. 3 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 2 cups beef broth. 2 cups uncooked rotini pasta. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1 tablespoon olive oil. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste.
Instructions: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cook until softened. Add ground beef, cook until browned. Stir in crushed tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a simmer, then add uncooked pasta. Cover and cook for about 15 minutes, stirring occasionally until pasta is tender. Sprinkle shredded mozzarella and grated Parmesan cheese over the top. Cover and cook for an additional 5 minutes until cheese is melted and bubbly. Serve hot, garnished with fresh basil if desired.
