FIRE IN THE BEAR. FIRE TO CARMY, FIRE TO SYDNEY. THE BEAR

It's good that we had season 2 for Tina and Sydney

They showed us what FIRE means to Sydney.

To Sydney she was trying to incorporate all the elements of the earth in her dishes, to be in sync and avoid waste.

So she listed them

Fire being last (almost the least important in her book)

But WATER just before FIRE (important positioning)

When she explained fire to Sydney it was as a spicy boost to the food (nduja -spreadable pork sausage made with chilies)

They sang about it.

It was fun

To Carmy, FIRE is a whole personality trait

Fire is his GREAT ESCAPE from reality

So I guess there's balance

Carmy can eventually realize it's probably not as big a deal as he has built it up to be and he doesn't really need it as much as he thought he did

Kale, white bean, and nduja soup from Serious Eats. I realized earlier this week that I hadn't eaten anything green in a while, so this was a nice change of pace.

In true disaster kitchen fashion I only had 1 shallot and forgot to get breadcrumbs, so I made the gremolata using chopped pecans instead. Definitely making this one again; any loose spicy sausage (chorizo or hot Italian) could be subbed for the nduja, and frozen spinach would work in a pinch instead of kale.

3 shallots, sliced thinly

3-4 cloves garlic, sliced

3 15oz cans of white beans, drained and rinsed

1 qt chicken broth

1 bunch of kale, stems removed and chopped

zest and juice of 1 lemon

1/2c breadcrumbs (or chopped nuts)

1/4c chopped flat leaf parsely

Salt, olive oil

Saute the shallots and garlic in oil until translucent and fragrant. Add nduja-- you might have to peel it. Break it up with a wooden spoon and cook it down until it releases its oils and coats the shallots.

Add beans and mix until the beans are coated in the shallot/nduja mixture. Smash some of the beans against the side of the pot. Add chicken stock, and bring to a boil, then let simmer for 15 minutes, until the beans are soft and the soup is thickened. Add some salt!

While that's cooking, toast the nuts/breadcrumbs in olive oil for a few minutes, then add the parsley, lemon zest, and some salt.

Stir the kale into the soup until it's wilted-- it's going to look like it won't all fit, but it cooks down fast, so this will take maybe a minute. Take it off the heat and stir in the lemon juice, and serve with a handful of gremolata on top.

It's just good soup, man. Beans, kale, and sausage are a classic combo for a reason.
