Ingredients: 1 lb shrimp, peeled and deveined. 1 cup cornmeal. 1 cup all-purpose flour. 1 teaspoon salt. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon cayenne pepper. Vegetable oil for frying. 4 hoagie rolls. Lettuce, tomato, and pickles for garnish. Mayonnaise and hot sauce for spreading.
Instructions: In a bowl, mix cornmeal, flour, salt, paprika, garlic powder, onion powder, and cayenne pepper. Coat shrimp in the mixture, shaking off excess. Heat vegetable oil in a deep fryer or skillet to 350F 175C. Fry shrimp until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels. Slice hoagie rolls in half and toast if desired. Spread mayonnaise and hot sauce on the rolls. Layer lettuce, tomato, pickles, and fried shrimp on the rolls. Serve hot and enjoy!
