For those who want to avoid carbs, this Keto Cauliflower Fried Rice is a tasty and healthy alternative to regular fried rice. It's great for people on a ketogenic diet because it's quick and easy to make.
Ingredients: 1 medium cauliflower, grated. 2 tablespoons coconut oil. 2 eggs, beaten. 1/2 cup diced carrots. 1/2 cup diced bell peppers. 1/4 cup diced onions. 2 cloves garlic, minced. 2 tablespoons soy sauce or tamari. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions for garnish.
Instructions: In a large skillet, heat coconut oil over medium heat. Add beaten eggs and scramble until cooked. Remove from skillet and set aside. In the same skillet, add more coconut oil if needed. Saut garlic, onions, carrots, and bell peppers until softened. Add grated cauliflower to the skillet and stir well. Pour soy sauce or tamari and sesame oil over the cauliflower mixture. Stir to combine. Cook for another 5-7 minutes until cauliflower is tender but not mushy. Season with salt and pepper to taste. Stir in cooked eggs and mix until well combined. Garnish with chopped green onions before serving.
