Thank you Pillsbury for teaching me my first mistakes on gluten free baking. First off gluten free baking is a bit different thing normal baking. I thought I’d tackle a box mix. I followed the directions to a T. The batter was more thick then traditional cake batter. When I put my first batch of cupcakes into the oven, the smell was amazing. Within minutes I wondered if they where already done. Of course they where not, but the smell seemed as tho they where. I cook by smell and looks. I never set a timer due to the fact I know our oven is off by a few degrees. Setting timers either burns or undercooks food often. I waited a bit longer watching thru the glass door of the oven. I could see the cupcakes starting to brown up a little on the top. I took my toothpick, inserted it. They where still not done. So I sat watching for a bit longer afraid I'd burn them. Finally I got inpatient and took them out. The toothpick was clean. The next batch I timed with stopwatch. While waiting, I tried one of the ones that were done. They where still a little not done. I was determined to figure it out. 15 mins later I took out the cupcakes did the toothpick trick, seemed done just as before. Took a bite not done. I put them back in for another 5 mins. Finally the tops where too crispy. I took a big sigh and started over! Second batch came out a little better. I just need to keep learning
