I haven't heard enough about this
Schools think putting up a no peanut sign is enough.
It isn't.
In my state, school lunch is free but there are so many people they don't cater to.
My little brother has celiac disease, consuming any kind or amount of gluten makes him sick and can put holes in his intestine. He has to bring his own food to school because they aren't willing to do enough to help him.
This is 1 example. There are so many marginalized people denied access to what they need.
We are lucky we can afford to send food with him everyday. There are way to many people in this world that don't have that luxury.
And it's not just celiac, there's diabetes, allergies and intolerance, colitis, chrons, irritable bowl, cystic fibrosis, and so many more. Reactions can range from mild pain and discomfort to death. It is important to pay attention to these.
(Not to mention religious or cultural beliefs along with being vegetarian or vegan but that's a whole other rant)
The system will continue on as is if we don't speak out.
School lunches need to be more accommodating to special diets.

Food Accountability Log Day 5: Christmas Eve Eve
breakfast:
1 slice white bread with ~vegan butter spread~ and honey
1 cup of coffee with some benefiber (gotta get your fiber kids)
Lunch:
More Chicken Veggie Stirfry! No spicy sauce this time tho
Dinner:
Zucchini noodles and cheesey garlic bread and a small salad with honey mustard dressing
The cheese is triple creme goat Brie ~ chefs 💋
Today was a treat day! I not only had one (1) snack, I had two (2). Not counting the Starbucks (custom drink orders are hard to count for) I’m at 1400 ish calories for the day.
First I had a holiday Starbucks.
Then I had some chocolate pretzel bites (that I forgot to take a picture of) that were delicious.
Today was also a fun day because the fam and I got to go “light looking”. It’s what we call driving around looking at all of the local Christmas lights that people put up. Normally we go on Christmas Eve but mom is working and its shaping up to rain so we figured to do it tonight while it was somewhat nice.
Here’s some pics from the lookout. We went kind of to a new area this year so it was pretty interesting to see some new lights.

Turkey Dumplings :) These little pillows of dough really make a satisfying dinner! They are deviously savory/sweet and nut and dairy free! No need to worry about nuts with takeout. What more could you ask for?
Ingredients :
Dough-
1. 2 cups of flour
2. 1 1/2 tsp of salt
3. 1 cup of warm/ hot water
Filling-
1. 1 tsp of minced garlic
2. 1 tsp of onion powder
3. 1 tsp of ground ginger
4. 1 pound of ground turkey
5. 1/4 tsp salt
6. 1/4 tsp pepper
7. 2 tsp of sugar
8. 1 tsp of soy sauce (you could use more but I limit soy in my diet)
9. 2 tsp of rice vinegar
10. 1/3 cup of chicken broth
11. 2 medium sized carrots shredded.
12. Canola oil for frying
Method:
Dough-
1. In a large mixing bowl, combine flour, salt, and water until you form a dough.
2. Knead the dough on a floured surface until it becomes smooth.
3.Cover the dough and let it sit while you prepare the filling.
Filling-
1.In a large mixing bowl, combine the ground turkey, garlic, onion powder, ginger, salt, pepper, sugar, soy sauce, rice vinegar, chicken broth, shredded carrots.
Forming the dumplings-
1. Divide the dough into around 24 round balls. Roll them until they are about 4 inches wide of late dough.
2. Measure 1 tablespoon of the meat mixture and put it in the center of the dough. Fold the dough in half and make a crescent. Seal the sides but pressing down and then sing a fork to make pleats along the edges. Repeat this for all 24 dough balls.
3.Bring a large pot to a boil. Heat a frying pan with a thin layer of canola oil.
4.Put about 5 at a time of the formed dumpling into the boiling pot of water and let them sit for about 4-5 minutes. They should be floating on top of the surface at 4 minutes.
5. After the 4-5 minutes used a slotted spoon to fish the dumplings out of the water and place them carefully into the hot frying pan. Be careful not to get water onto the pan because it will start to spit oil at you! Let them fry until the bottoms are brown.
6. Transfer the fried dumplings onto a plate with paper towels on it to absorb excess oil.
7. Repeat the boiling of dumplings and frying until all 24 are finished.
8. Serve them with a vegetable and a dipping sauce. ( I love sweet and sour sauce!)
9. Enjoy.
Having soap (detergent) allergies/sensitivities mean I get sick more often because sometimes I have no other choice than to wash with just water, or deal with allergic rashes, and broken skin lets in more germs.
I have a batch of these drying on a (clean) countertop now. I can’t use the gross pink slime in the office bathroom, so having options is good.
