Chocolate Cake WFPB 🌱 We have had a busy few days with lots of celebrations including our wedding anniversary 💚 The chocolate cake is a an adaptation of the Dr McDougall recipe, - so vegan, with no oil, - sugar substituted with a mix of Stevia & Erythritol. Chocolate Banana Muffins I found a very large 6 muffin pan sometime ago at the Op Shop & had to get it…. coz’ Large Muffins 😍 I still don’t use muffin pan liners & bake straight from the pan after spraying with nonstick spray. I used, 3 overripe Bananas (medium size) 1/2 cup pitted Dates, soaked & mashed 1 tablespoon Vinegar 2 tablespoons Cacao Powder Mix these together into a somewhat smooth paste. Fold in 1/2 cup Spelt Flour + 1/4 cup Oat Flour + 1/4 cup Almond Flour. Sprinkle in a teaspoon of Baking Powder. Add cold water by the spoonful if needed to get a reasonably thick batter. Garnish with Almond Slices if desired. Bake for 16 - 18 minutes at 165 degrees C, or until a skewer inserted into the middle of a muffin comes out clean! Banana, Date & Fig Muffins Rainy day baking to cheer up the dreary weather & use up all the fast spoiling fruit because it’s still summer! Quick vegan, oil free & sugarfree batter made with all the leftover fruits! Of course heat up the oven to 175 degrees Celsius & spray a muffin pan with non stick spray. I’ve decided to not use any more liners to reduce waste. We need 2 overripe Bananas, 3/4 cup slightly browned Figs & 1/2 cup pitted Dates mashed together with a tablespoonful of Apple Cider Vinegar. Fold in a mix of, 3/4 cup Spelt Flour & 1/4 cup Almond meal. Use water (if needed) by the spoonful to get a smooth but thick scoopable batter. Sprinkle a teaspoonful of Baking Powder and mix well. Bake for 14 - 17 minutes at 170 degrees Celsius or until a skewer inserted comes out clean.
