5 Easy, High-Protein Paleo Recipes

Eating a Paleo diet can be challenging at times, so here are 5 easy Paleo meals from chef, author and recipe developer Stephanie Gaudreau.
1. Spinach Beef Frittata
Frittatas are one of those classic one-skillet egg dishes that taste even better the next day. You can use any type of ground meat you’d like in this recipe. Since ground meat can be fattier than other cuts, try to stick to higher-quality grass-fed beef. Experiment with different types of veggies too! Get the recipe here.
2. Cinco de Mayo Steak Salad
Here’s a delicious salad option, topped with pan-fried steak. The jicama adds crunch and the avocado brings healthy fat to the dish. Top the salad with the dressing right before eating so the spinach doesn’t get soggy. You’ll walk away from lunch feeling satisfied. If you don’t have steak, grilled chicken is a great substitute. 3. Paleo Chicken Bacon Mushroom Quiche
This dish is incredibly easy to make and uses up any leftover meat you may have in your fridge. What makes this Paleo? First, it’s crustless. Second, unlike most quiche, this has no dairy. Wondering how a quiche differs from a frittata? Technically, it’s the amount of liquid you add: A frittata has very little, while a quiche has more, resulting in a more custard-like texture. 4. Thai Coconut Soup (Tom Kha)
This is a common Thai soup that’s really easy to make, but it has so many layers of complex flavor. The only problem is that some of the ingredients can be tough to find or you may not have them on hand. This soup mimics Tom Kha, with its rich coconut broth, with shrimp for protein and veggies to make it a complete meal. What’s a Scotch egg? Take seasoned ground meat, envelope a perfectly boiled egg inside, bake it in the oven and you’ve got a protein-packed snack.
