Ingredients: 2 cups canned chickpeas, drained and rinsed. 1/4 cup fresh spinach leaves. 1/4 cup tahini. 3 tablespoons lemon juice. 2 cloves garlic, minced. 1/4 cup extra-virgin olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste.
Instructions: Place chickpeas, spinach, tahini, lemon juice, and garlic in a food processor. Pulse until the mixture is coarsely chopped. While the food processor is running, slowly drizzle in the olive oil until the hummus is smooth and creamy. Add ground cumin, salt, and pepper, and blend for another 30 seconds to combine.
