Ingredients: 1 cup dried chickpeas. 1 teaspoon baking soda. 4 cloves garlic, minced. 1/2 cup tahini. 1/4 cup fresh lemon juice. 1/4 cup extra-virgin olive oil, plus more for serving. 1/2 teaspoon ground cumin. Salt, to taste. Paprika, for garnish. Chopped fresh parsley, for garnish.
Instructions: Put dried chickpeas in a big bowl and add cold water to cover them. Put in the baking soda and leave it overnight. If you soak chickpeas, drain and rinse them. Put them in a big pot and add water to cover them. Bring to a boil, then lower the heat and let it cook for an hour, or until the chickpeas are very soft. Remove any foam that forms while the food is cooking. After cooking chickpeas, drain them and let them cool down a bit. Minced garlic, tahini, lemon juice, olive oil, ground cumin, and a pinch of salt should all be put into a food processor. If you need to, add a little water to get the consistency you want. Process the mixture until it is smooth and creamy. If you think the hummus needs more salt or lemon juice, just taste it and add more. Put the hummus in a bowl to serve. Drizzle with extra-virgin olive oil, sprinkle with paprika, and top with chopped fresh parsley. Put it on crackers, pita bread, or vegetables to go with it. Have fun!
